If you wash your kale, make sure to pat it dry. This will keep the kale from steaming in the oven if there is water left on the leaves. Adding just a touch more oil than you would think really helps crisp the kale! I call for 1/4 olive oil for a 3 cups of green kale. If you are using less kale, use a little less oil. If your kale is too crowded on the pan, it will steam it and the top layer will burn before the bottom layer crisps. Finally, use a lower temperature around 325F and bake your kale an extra 10 minutes. This will create a uniform crispiness that is irresistible

  • This seasoning is a combination of red chili powder, garlic powder, and salt. The lime is added fresh at the end. You can use other types of chili powder. Smoked chili powder and cayenne pepper are good options. I like red chili powder since its easy to find!

  • Some grocery stores like Trader Joes will have pre-mixed chili lime seasoning. This is also a great option if you are looking to save a step. Some of the powders will have dried lime combined with them, so your kale will be extra citrusy.

Recipe for Roasted Kale Chips

  • 1-2 large bunches green kale (about 3-4 cups) You can use any kale, see notes for reccommendations.
  • 1/4 cup olive oil You can also use coconut oil or vegetable oil. I do not sugges butter since your kale may feel a little greasy, but it would be delicious.
  • 1 Tbs chili powder You can also throw in cayenne pepper for extra spice.
  • 1 Tbs garlic powder
  • 1 tsp salt Fine sea salt mixes best with the dried spices.
  • 1 lime, zested The zest is what gives the kale a bright chili lime flavor! If you only have lime juice, that works too.

How To Make Kale Chips with Chili Lime Seasoning

  1. Wash and Shred the Kale

    1. Preheat the oven to 325F (convection function if you have it)

    2. Wash the kale and pat dry with a kitchen towel.

    3. De-stem the kale and lightly shred so that the kale is in larger pieces

    4. Add the kale to a baking sheet. You can roast the kale on foil for faster clean up.

  2. Season and Roast the Kale

    1. In a small bowl, mix the chili powder, garlic powder, and salt. Mix until combined.

    2. Drizzle the olive oil and seasoning over the kale and lightly toss and massage with your hands until well coated.

    3. Roast in the oven until the kale is crispy all the way through, about 20 minutes. I suggest stirring halfway to make sure to get an even crisp.

    4. Remove from the oven and zest the lime over the kale as it cool. Serve with a squeeze of lime juice and enjoy!
