  • For this recipe, I use feta cheese, crushed red pepper, and a slight drizzle of honey. Feta cheese is a super easy topping that adds creaminess, and a little extra protein. The red pepper is a pop of spice, that is totally optional but is also balanced when you add just a touch of honey.

  • Other toppings that would make this dish extra delicious are basically any creamy cheese! Cheddar cheese, brie, or goat cheese are all great options for this dish.

  • When washing and chopping the broccoli, pat the broccoli dry so that there is no excess water. Water will lead to soggy broccoli! The smaller you chop the broccoli, the faster they will cook.

  • Other vegetables that you can use are broccolini. Baby broccoli has a great texture and is really delicious. These vegetables are hearty and will be great subs for regular broccoli.

Ingredients for Roasted Potatoes, Broccoli, and Chicken Sausage:

Recipe for Easy Sheetpan Dinner

  • 2 large sweet potatoes I use red sweet potatoes but you can use white sweet potatoes too!
  • 1/4 cup olive oil The olive oil is for roasting the potatoes and broccoli. You can use any type of oil you prefer.
  • 1 large head of broccoli You want a total of a couple cups chopped. You may need a couple of heads of broccoli depending what they have at the store.
  • 3-4 chicken sausages Buy pre-cooked chicken sausage. This will mean you do not have to deal with any raw meat!
  • 1/3 cup feta cheese The feta is added last. You can add as much as you want.
  • 1 tsp crushed red pepper You can use black pepper or a slight drizzle of chili oil.
  • 1 tsp honey Maple syrup works well too.
  • salt and pepper To taste.

Directions For Roasted Potatoes with Broccoli and Chicken Sausage:

  1. Roast the Sweet Potatoes

    1. Preheat the Oven to 350F. If you have the convection function on your oven, I highly recommend using!

    2. Peel and chop the sweet potatoes into small bite size pieces.

    3. Add to your baking sheet with the olive oil and some salt and pepper.

    4. Toss with your hands or spatula until well combined. Add to the oven.

    5. Stir after about 20 minutes and return to the oven to finish crisping, about 20 minutes.

  2. Prep and Add the Broccoli

    1. While the potatoes are cooking, wash and chop the broccoli. See notes above if you want preparation tips or other vegetable suggestions.

    2. After the sweet potatoes have cooked for about 40 minutes, add the broccoli to the baking sheet.

    3. Toss with the potatoes to incorporate with the oil, adding a little extra salt and pepper.

    4. Return to the oven and allow the broccoli to crisp, about 15 minutes.

  3. Chop and Add the Chicken Sausage

    1. While the broccoli is cooking, chop the chicken sausage.

    2. Once the broccoli is cooked, add the chicken sausage.

    3. Cook for 10 minutes or until it is hot all the way through.

  4. Top with Cheese

    1. Once the chicken sausage is done heating through, remove from the oven,
