Flank Steak in Soy Marinade

If there is one easy and flavorful recipe for steak that you will make very often, it is this one. The marinade is an exquisite combination of soy, sesame, and brown sugar, that when cooked, creates a tender and flavorful steak. This steak recipe calls for 12-24 hour marinade which creates a tender and flavorful steak that is hard to beat. If possible, this steak is also best when cooked on the grill, though a sear and oven finish works well too!

Notes and Tips For Flank Steak in Soy Marinade:

  • The internal temperature of 125 F is for medium rare. If you like a more rare steak, take your meat off sooner!

  • Resting really helps seal in the juices, I recommend a 5 minute sit post cooking to help with this.

  • Slice and top with finishing salt to enjoy to the fullest flavor.

  • If you have an instant read thermometer, this is a great way to see if your meat is done or close to done. Taking the meat off the heat a few degrees sooner than final temperature, allows the meat to rest up to the correct temperature which prevents over cooking it.

What To Serve With Flank Steak:

  • You can serve this flank steak with basically anything! It pairs well with salad, rice dishes, pasta, and other vegetables. The flank steak has great flavor and even though it is marinade, the notes of soy, garlic, and brown sugar are delicious.

How Long Can This Steak Marinade?

  • This steak can marinade for 24-48 hours once you place it in the marinade. If you use fresh garlic, however, make sure you do not leave it for more than 24 hours. The fresh garlic has enzymes that could start breaking down your meat it left too long. Fresh lime juice is also a very acidic ingredient. If you need to leave the meat marinade for more than a day, wait to add the lime juice until 24 hours prior to cooking.

Recipe for Flank Steak in Soy Marinade:

  • 1-2 lb Flank steak This marinade also works with tri-tip.
  • 3 Tbs soy sauce or coconut aminos Have more on the side for serving.
  • 2 Tbs rice vinegar You can also use lime juice.
  • 2 Tbs mirin You can use Sake if you have it!
  • 1 tsp oyster sauce You can also use fish sauce (seen above) which is a stronger flavor than oyster sauce.
  • 1 Tbs coconut sugar or brown sugar This will caramelize when cooked and be so delicious!
  • 2 Tsp garlic powder You can also use a couple cloves, finely minced.
  • 1 tsp ginger powder Giner powder adds a nice spicy flavor.
  • 1/2 tsp salt, to taste when serving.
  • 1 tsp red pepper optional but adds a little kick.

Above I show my staple ingridients for the marinade. Soy sauce is the base and the most notable flavor. The Fish sauce should be added in very small doses but adds so much flavor! The dry ingredients that I always include are the red pepper, coconut sugar, garlic powder, and ginger powder. Not pictured here are mirin and rice wine vinegar. I have used both and either will yeild a delicious steak. Though not necessary, sesame oil adds depth to the marinade and helps the steak from sticking to the grill. If doing the steak on the stove, I recommend adding some to the skillet.

You can cook the flank steak on the grill or on the stovetop. The stovetop offers an easy indoor method if the weather is bad or you do not own a barbecue. I use the stovetop method for this flank steak when I make fried rice so that I can work on two things at once! Which method do you prefer? Let me know in the comments below!

How To Make Flank Steak In Soy Marinade:

  1. Make The Marinade:

  2. Combine all the ingredients in a small bowl and whisk together.

  3. Place the steak in the marinade and rub over the steak, lightly tenderizing with your hands

  4. Let sit for a minimum of 30 minutes or up to 24 hours.

  5. Cook The Steak:

  6. When ready to cook on a grill:

    1. Heat the grill to 500 F, place the steak on.

    2. Allow 3 minutes of cooking and then flip.

    3. Allow 3 flips before starting to test the meat for doneness.

    4. The meat should spring back slowly and should be around 125 F internal temperature

  7. When ready to cook on a skillet: Preheat the oven to 425 F

    1. Heat a skillet adding some oil or butter as it gets hotter

    2. Just as it starts to smoke, place the steak on the hot skillet.

    3. After 2 minutes, flip and sear the other side for 2 minutes.

    4. Place in the oven and allow to cook until the steak reaches around 125 F internal temperature.
