Chocolate hazelnut is one of my favorite dessert flavors! Combining chocolate and hazelnut into cookies has been one of my favorite ways to enjoy two of my best loved ingredients: chocolate and hazelnuts. If you have ever had chocolate hazelnut butter, then you know the delicious nature of this combination. These cookies are made with roasted hazelnuts, cocoa powder, and chocolate chips to recreate the flavor we all know and love.

What makes these chocolate hazelnut cookies even better is the dark brown sugar that makes them so soft and chewy! When cooled they have the perfect slightly crisp exterior but a super chewy middle that is so delicious! These cookies also require no chill time, meaning they can be ready in just half an hour! The perfect dessert cookie if you are having friends over, are in need of a chocolate hazelnut fix, or just want to try a new cookie recipe!

Notes and Tips for Chocolate Hazelnut Cookies:

  • You can use roasted or un-roasted hazelnuts for these chocolate hazelnut cookies. Pre-roasted hazelnuts will have a stronger flavor once the cookies cool but will not over cook since they are contained within the cookie dough!

  • You do not need to rub the skins off the hazelnuts, they will add delicious flavor and will even add texture to your cookies once they cool.

  • Having room temperature ingredients is helpful for getting these cookies to have the right texture. I recommend pulling the egg and butter out about an hour prior to baking.

How To Make Chewy Cookies?

  • Dark brown sugar is the secret to the soft and chewy cookie that is so good. Dark brown sugar has more molasses than brown sugar or granulated sugar, which has no molasses. The extra moisture from the molasses helps keep the cookies soft and moist even after cooling.

  • With the extra moisture, the cookies do need a few minutes on a cooling wrack to make sure they do not fall apart, but as soon as the sugar starts to cool, you are left a delicious, soft, and chewy chocolate hazelnut cookie.

Does This Chocolate Hazelnut Cookie Dough Require Chilling?

  • There is no chill time required for these chocolate hazelnut cookies! The lack of chilling in the fridge or freezer helps produce a softer, chewier cookie. If you like a thicker cookie, you can chill the cookie for about 20-30 minutes prior to scooping it onto the baking sheet.

What Kind Of Cocoa Powder To Use in Chocolate Hazelnut Cookies?

  • I use a dark, dutch process cocoa powder. You can also use natural cocoa powder. You will not notice a difference, except the dutch process cookies may be slightly darker than the natural cocoa powder.

  • There is also black cocoa powder that is very strong and gives some cookies that very dark chocolate look. I do not recommend this type of cocoa powder for chocolate hazelnut cookies since it can be a stronger flavor that overwhelms the hazelnuts.

What Else Can I Add To Chocolate Hazelnut Cookies?

  • Chocolate hazelnut cookies are a delicious combination that goes with many different flavors! Try adding a tsp of instant coffee to the dough and sprinkling it on top prior to baking the cookies. The chocolate and coffee is the perfect compliment to the hazelnuts.

  • Try using slivered almonds either with the hazelnuts or all by themselves. Slivered almonds are light in flavor and do not have almond skin so they have similar taste to hazelnuts.

  • Dried cherries are a delicious sweet note that pairs perfectly with chocolate and hazelnuts. Try throwing 1/2 cup of chopped, dried cherries.

  • This recipe uses buckwheat flour to add an extra note of nuttiness to the cookies. Though you can leave out the buckwheat flour, you can experiment with gluten free flour, oat flour, cassava flour, or any other flour that you like to bake with.

Ingredients For Chocolate Hazelnut Cookies

Recipe: Makes 9 - 12 Cookies

  • 1/2 cup butter Unsalted and at Room temperature
  • 1 egg Egg acts as the binder in these cookies.
  • 1 tsp vanilla Vanilla adds flavor
  • 3/4 Cup dark brown sugar The dark brown sugar helps keep the cookies extra soft. You can use light brown sugar too.
  • 1 tsp cocoa powder The cocoa powder compliments the chocolate chips and gives just a little boost of chocolate flavor!
  • 1/2 cup whole hazelnuts I prefer to leave the skin on for extra flavor but you can remove the skins prior to baking.
  • 1 cup all purpose flour
  • 1/2 cup buckwheat flour The buckwheat flour adds an extra nutty note to these cookies. You can leave the buckwheat out and sub in an additional 1/2 cup of all purpose if your prefer.
  • 1/2 cup chocolate chips Any kind will do.
  • 1 tsp baking powder The baking powder will give the cookies slight lift but keep them as a soft and gooey texture.
  • 1/4 tsp salt The salt helps balance all the sweet

How To Make Chocolate Hazelnut Cookies

  1. Make the Cookie Dough

    1. Preheat the oven to 350 F

    2. cream together the butter and sugar until smooth

    3. add in the vanilla and egg and mix until combined

    4. In a separate bowl, measure out the flour, buckwheat flour, baking powder, salt, and cocoa powder. Stir until combined.

    5. Add the hazelnuts to the flour mixture and lightly stir in.

    6. Add the dry ingredients to the wet, using a spatula or wooden spoon to combine into a cookie dough.

    7. Add the chocolate chips to desired level and mix until combined.

  2. Bake the Cookie Dough

    1. Line a baking sheet with parchment paper.

    2. Divide the cookie dough into 1 inch cookie dough balls using a spoon or cookie scoop. TIP: top the cookies with a bit of flaky salt before going into the oven for a little salted chocolate action.

    3. Bake the cookies for 8-10 minutes or until the edges are starting to crack.

    4. Remove from the oven and allow to rest for 3 minutes on the cookie sheet.

    5. Remove to a cooling wrack for 15 minutes

    6. Enjoy!
