The Tastiest Chocolate Chip Cookies with Flaky Salt

There is something universally cozy about a chocolate chip cookie. The recognizable soft brown cookie with large chunks of chocolate are sweet morsels of home that never fail to bring a smile to someone’s face. My favorite way to enjoy a cookie, is in the morning with a hot cup of coffee. They also make a quick and easy dessert for any day of the week. This recipe uses almond flour and coconut sugar to give a the hint of a graham cracker when the cookie is cooled. That, in combination with using a dark chocolate, makes these chocolate chip cookies delicious and irresistible.

Notes and Tips for Tasty and Delicious Cookies:

  • Coconut sugar is one of my favorite sugars to cook with. It has a slight caramel flavor and adds a lot of rich flavor to your bakes. When the cookies are cooled they have a slight graham cracker flavor that I really like. If you do not have coconut sugar, brown sugar is a great substitute.

  • Top your cookies with a some large flaky salt before they go into the oven. The salt will be baked into the top and will add a great crunch and salty burst to your sweet treat. Make sure to use large flaky salt as table salt is too small and will make your cookies salty.

  • Using almond flour is optional. If you do not want to use almond flour, add in a couple extra tablespoons of flour to the dry ingredients. I began using almond flour in my chocolate chips cookies because I liked the flavor and the texture they added. Do not worry if you do not have it on hand!

  • For easy transfer to a cooling rack, cook your cookies on parchment paper. It makes clean up easy too!

  • If you have time on your hands, mix your sugar and butter as long as your patience allows. It adds air to the dough and creates a fluffier cookie.

Do I Have To Chill The Cookie Dough?

  • Cooling the dough creates a cakier cookie. If you like your cookies to spread and be a little thinner, you can skip the chill time and place them directly in the oven.

  • Using room temperature butter is important, especially if you do not plan on chilling your dough. You may find that using melted butter creates a flaky cookie that does not stay together.

What Is the Secret To Chewy Cookies?

  • Chewy cookies can be achieved in a couple of ways! Using brown sugar is a great way to get a chewier cookie. Brown sugar has more moisture than white sugar so your cookie will naturally be a little softer.

  • Adding an extra egg yolk can also help achieve a chewier cookie. The egg yolk adds a little extra fat, which helps hold moisture and adds chew.

  • Not over baking your cookies is key to getting a chewy cookie! Pulling your cookies just as the edges start to brown around the edges, will help ensure your cookies do not overbake!

Ingredients For Chocolate Chip Cookies with Flaky Salt:

Recipe:

  • 1 Egg + 1 egg yolk
  • 1 Tbs vanilla extract
  • 1/2 cup softened butter (about 115 grams)
  • 1/2 + 2 Tbs cup brown sugar or coconut sugar
  • 2 Tbs white sugar
  • 1 2/3 cup flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup to 1 cup chocolate chips
  • 1 tsp flaky salt for topping

How To Make Chocolate Chip Cookies With Flaky Salt:

  1. Make the Cookie Dough:

  2. Preheat the oven to 350 F

  3. With a mixer (stand or hand held) mix the sugar, almond flour, and butter. This is called creaming the butter and sugar together.

  4. Add in the egg and vanilla. Mix an additional 2 minutes. This mixes air into your cookie to make them fluffy and delicious.

  5. In a separate bowl, mix the flour, baking powder, and salt

  6. Slowly add the dry ingredients to the wet. It can be easier to mix the dry in by hand.

  7. When the dough is combined, add chocolate chips to taste.

  8. Chill the dough for around 30 minutes, (optional)

  9. Bake the Cookies:

  10. Bake 8-10 minutes or until just golden brown and starting to crack on top.
