Gluten free cookies do not always stay together as well as regular cookies. I use tapioca starch to help hold these cookies together, and it works! Feel free to use 1:1 cornstarch instead of tapioca starch for these cookies.
If you do not have quick cook oats, just blitz regular rolled oats in a food processor until you have a quick cook oats consistency.
Use blanched almond flour for this recipe. This is a smoother almond flour than natural almond meal. Almond meal is made from whole ground almond which will have the skins of the almonds included. You can use almond meal but your cookies may be crumbly and not hold together as well.

- 1/3 cup butter Unlsalted butter is best since we add salt in. If you only have salted butter, skip adding the extra salt.
- 1 cup almond flour Blanched almond flour is preferred
- 1 cup quick oats If you only have rolled oats, just blitz them in a food processor!
- 1 Tbs white sugar white sugar is a sweetener but also helps hold the cookies together once they cool.
- 1/3 cup brown sugar Brown sugar adds flavor. You can use both dark or light brown sugar.
- 1/2 tsp almond extract But optional but highly recommended for flavor!
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp tapioca starch The tapioca starch helps hold the cookies together.
- 1 egg The egg is a binder.
- 1/4 tsp salt the salt helps balance the sweet flavors
- 1/2 cup chocolate chips optional but so delicious!
How To Make Almond Flour Oatmeal Cookies:
Make the Cookie Dough
Preheat the oven to 350F
To a large bowl, add the melted butter and sugars. Mix until well combined with a spatula or wooden spoon.
Add the egg and almond extract and mix to combine
Add the salt, baking powder, baking soda, and tapioca starch. Mix to combine.
Slowly add the oats and almond flour in 1/2 cup increments each, stirring in between.
Stir in the chocolate chips or any other add-ins you want to use.
Bake the Cookies
Line a baking sheet with parchment paper.
Using a cookie scoop or spoon, add 1 inch balls of cookie dough to the baking sheet.
Bake until the edges are just turning golden brown, about 9-10 minutes.
Remove and let sit for a few minutes before removing them to a cooling wrack.
