Baked salmon with mayo is one of the best ways to enjoy salmon! This salmon recipe is an easy sheet-pan dinner that is served with sweet potatoes and bok choy. It is a really simple but flavorful one pan meal that is perfect for a weeknight or for when you want something delicious but hands off!

Sheet pan meals, when done right, can be a game changing way to prepare dinner, meal prep, or any meal. They are not labor intensive, versatile, and usually mean less clean up. This salmon recipe uses Furikake seasoning and mayo to season the salmon and make it super flavorful. The bok choy and sweet potatoes are simply seasoned with garlic, salt, and pepper. This not only makes prep so easy but means the potatoes and vegetables highlight the salmon.

Notes and Tips For Mayonnaise Baked Salmon:

  • This recipe makes a great meal prep dinner or lunch! The salmon can be eaten cold but is great heated up in either the skillet or the microwave. The sweet potatoes and bok choy may not be as crispy when heated in the microwave but will still taste great.

  • I recommend 1 pound of salmon per 2 sweet potatoes and 2 large heads of baby bok choy. This serves 3-4 for a light dinner or makes two large portions. My husband and I often eat this in one go, but I have also made this as my meal prep for lunches the first part of the week.

  • The sweet potatoes and bok choy can be prepared up to one day in advance. This is a great option for anyone looking to get ahead for the next day’s meal. To prep them, peel and chop the sweet potatoes. For the baby bok choy, wash, trim, and then cut. Do not season the bok choy until ready to cook.

Why is Mayo Good On Salmon?

  • Mayo is great on salmon because it adds moisture and flavor. The mayo holds a lot of moisture in and adds fat to create the best flavor and texture in your salmon while it bakes. Mayo also does a great job of holding the Furikake seasoning to the salmon. Once everything is cooked, it makes a great sauce over your vegetables and potatoes.

  • You can use any type of mayonnaise for this recipe. I like avocado oil based mayo but you can use any that you prefer.

What Kind of Salmon Should I Use?

  • You can use any salmon for this recipe. Different salmon may have different taste and texture depending how or where it was raised. I love Atlantic salmon since it is a mild salmon that goes great with any flavor. I look for salmon that has been processed for bones to make it really easy to cook. You can also buy salmon fillets that are already cut into individual servings! This is a great option if you want make this recipe for meal prep!

What is Furikake and Where Do I Find It?

  • Furikake seasoning is a mix of dried seaweed, sugar, salt, sesame seeds, and sometimes dried fish of some sort. You can find many different varieties of Furikake that pair well with not only salmon baked with mayo but rice bowls, eggs, and roasted veggies.

  • You can find Furikake online or in most groceries stores, but you will find the best brands and greatest variety at your local asian market.

Is It Better To Bake Salmon Covered or Uncovered?

  • I like baking salmon uncovered for a couple of reasons. When salmon bakes uncovered, it is easy to see when it is close to being done by looking for the fat to begin separating out. Another reason to bake your salmon uncovered is that it is easy to turn the broiler on for a couple of minutes at the end to really seal in the flavor and add just a touch of smokiness to the top.

  • Baking you salmon covered is a perfectly good way to cook salmon. I would cover it in foil for easy removal to check for doneness but as mentioned above, uncovered is my preferred way.

What Kind Of Sweet Potatoes To Bake With Salmon?

  • I love cooking salmon baked with mayo with red or white sweet potatoes. When cooked, they give incredible texture, flavor, and make a great base for the Furikake mayo. You can also use yellow potatoes or skip the potatoes all together and serve with short grain rice.

  • Using potatoes allows this meal to be a one pan dish but you can serve the salmon with any carb that you like. Furikake mayo goes great with noodles or just on top of extra veggies!

  • Salmon baked with mayo, sweet potatoes, and bok choy is a complete meal all on its own but I have listed some extra sides to serve with it, as well as some veggie substitution, and even my favorite dessert to make along side!

  • Try serving this dinner with Green Cabbage Salad with Ginger Soy Dressing! Matching the flavor profile, this salad is crunchy, healthy, and the perfect compliment.

  • Try baking some Kale Chips and serving alongside for some added fiber.

  • Try baking a batch of Almond Flour Cookies to serve as dessert! These cookies are great kept in the freezer, are gluten free, and are a great dessert that is not too sugary!

Ingredients for Sheet Pan Salmon with Potatoes and Bok Choy

Recipe: Serves 3-4

  • 1-2 Large Red Sweet Potatoes You can use regular yellow potatoes or white sweet potatoes too.
  • 2 Tbs olive oil You can also use melted coconut oil or even butter!
  • 1 tsp salt To taste
  • 1/2 tsp black pepper To taste
  • 1 tsp garlic powder
  • 2-3 Large baby Bok Choy You can use regular bok choy but baby bok choy is sweeter! You can also use broccolini or brussels sprouts too!
  • 1 Lb Salmon 1 lb of salmon is a good serving for 4 people or 2 very hungry people.
  • 2 Tbs Furikake seasoning + more for serving See notes above
  • 1 Tbs Mayo This is for baking the salmon

How To Make Sheet Pan Salmon with Potatoes and Bok Choy

  1. Prepare the Potatoes and Vegetables

    1. Preheat the oven to 375 F or 350 F convection.

    2. Peel and chop the potatoes into coins or slices and add them to a baking sheet.

    3. Drizzle with olive oil, the garlic powder, and add a pinch of salt and pepper. Toss to combine.

    4. Bake the sweet potatoes for about 25 minutes, tossing at 15 minutes, or until the edges are starting to brown.

    5. While the potatoes are cooking, wash and chop the bok choy into strips, and set aside.

    6. After 25 minutes add the bok choy to the baking sheet with a small drizzle of olive oil and toss lightly with a spatula. You can also toss with oil in a bowl, but this method saves a bowl!

    7. Bake the bok choy for 5-8 minutes with the potatoes.

  2. Prepare and Cook the Salmon

    1. Once the bok choy goes in the oven, prepare the salmon by patting dry with a paper towel, spreading with 1 Tbs of mayo and then sprinkling with salt and furikake seasoning.

    2. Once the bok choy has begun to wilt, add the salmon to the baking sheet.

    3. Bake the salmon with the veggies until the salmon easily flakes, about 12 minutes. The time to bake with vary based on size of salmon fillet and oven.
