Easy Oatmeal Cookies with Dark Chocolate

Oatmeal cookies are often looked over as a dessert. They can be a bit flavorless but I think they deserve a second look. I decided that the soft and chewy oatmeal cookie is better paired with a dark chocolate. These go together very well as a morning pastry, as an after dinner sweet treat, or even a post work out pick me up. I personally love picking away at one throughout the day, enjoying the bite of chocolate every time. These oatmeal chocolate chip cookies are incredibly easy to make and quick to bake. They highlight the natural sweetness of oats, which add so much texture and flavor and have quickly become one of my favorite desserts.

Notes and Tips For Better Oatmeal Chocolate Chip Cookies:

  • I suggest always pulling your cookies from the oven just as they begin to crack on top. They will continue to cook but will maintain a soft and chewy texture as they cool.

  • Shape your cookies before going into the oven, especially if you prefer a cookie that is a bit flatter. This recipe does not use a lot of sugar, which can hinder the cookies spreading so I suggest pressing them slightly to help the process along.

  • Looking for ad-in ideas? Add a pinch of cinnamon or some chopped walnuts. You can substitute out 2 Tbs of flour for 1 Tbs of cocoa powder if you are looking a chocolate fix that chocolate chips just can not satisfy.

  • Chilling the dough before baking is not necessary. If you melted your butter before creaming, I suggest at least 15 minutes of chill time as your cookies may not hold up very well after cooling.

  • I use rolled oats for this recipe. I like the texture and heartiness they add to the cookies. You can also use quick oats.

What Other Chocolate Can I Put in Oatmeal Chocolate Chip Cookies?

  • Other than chocolate chips you can use chocolate chunks, rough chopped chocolate bars, or even your favorite chocolate candy in these cookies. Give M&M candies a try, or rough chop a lot of Reeses!

  • If you want to stay on the lower sugar side, try using darker chocolate. The darker the chocolate, the less sugar (usually). My favorite way to do this is to rough chop an 85% chocolate bar, or two, into the cookie dough. Let me know what kind of chocolate you like in the comments below!

Are Oatmeal Chocolate Chip Cookies With Dark Chocolate Gluten Free?

  • These cookies are not gluten free. Regular flour is used to help hold the cookies together! If you want to make these cookies gluten free, you can use any type of gluten free flour. My favorite is cassava flour or a 1:1 blend. Let me know if you try these cookies in a gluten free form!

Recipe for Oatmeal Chocolate Chip Cookies:

  • 1/2 cup butter (1 stick), softened. Unsalted is best.
  • 1 egg egg is a binder for your cookies. You can add an extra egg yolk if you want a little chewier cookie.
  • 25 g white sugar (about 2 Tbs) The white sugar helps create a slight crispy edge when the cookies are cooled.
  • 45 g coconut or brown sugar (about 1/2 cup). The brown sugar adds moisture and helps create a nice chew.
  • 2 tsp vanilla
  • 150 g all-purpose flour (about 1 1/4 cup). Any type of flour works.
  • 130 g rolled oats (about 1 1/2 cups)
  • 1/2 tsp baking soda
  • 3/4 tsp salt This might seem like a lot of salt but it is balanced with all the sweet and tastes so good!
  • Dark chocolate chips, to taste

How to Make Oatmeal Chocolate Chip Cookies:

  1. Make the Cookie Dough

  2. Preheat the oven to 350 F

  3. Cream together the butter, white sugar, and coconut sugar

  4. Add the egg and vanilla and mix for another minute.

  5. In a separate bowl combine the flour, salt, baking soda and oats.

  6. Slowly add the dry ingredients to the wet. I start with my hand held beater or stand mixer and then switch to a spoon as the dough thickens.

  7. Once combined, add the desired level of chocolate chips.

  8. Chill the dough if you prefer, for 30 minutes. This step is optional!

2. Bake the Cookies

  1. Line a cookie sheet with parchment paper

  2. Divide the cookies into small 1 inch balls. I make about 10-12 cookies with this recipe. Spread evenly onto the cookie, slightly pressing the cookies down.

  3. Bake until the tops of the cookies begin to crack and the bottoms and edges are just beginning to browning. Usually baking between 9 and 11 minutes total.

  4. Remove to a cooling rack, Enjoy!
