These cheesy potatoes are not only oven roasted until golden and crispy, but are flavored with parmesan and green onion, and then baked again so your cheese is crispy and perfect. I love having an easy and delicious breakfast potato recipe on hand and this one is sure to be a staple in your house.

My favorite part about these potatoes is how the cheese melts and forms a parmesan crust in the oven. It is salty and so good. Notes and Tips for Oven Roasted Potatoes with Parmesan and Green Onion:
Try to cut your potatoes into similar sizes. I find that if you have potato chunks that are too big or too small they either do not cook or get close to burning. If you find you have some pieces cooking much faster, I suggest removing those until it is time to marry the potatoes with the cheese.
This recipe works well with red potatoes, yellow potatoes, fingerling potatoes, and any other small variety. The smaller the potato, the less prep work for you!
These potatoes are great as an easy breakfast side dish or as a meal prep option for your week. They reheat really well and can be a tasty addition to your breakfasts all week long. Since they do take about 45 minutes to cook, I suggest you incorporate them into your weekly meal prep rotation, save them for a brunch on the weekend, or even a day you work from home.
I use parmesan because I love the flavor. It is a lighter cheese but if you want to substitute in cheddar, you will not be disappointed.

Should You Boil Potatoes Before Roasting?
I do not boil my potatoes before roasting. I do this mostly to save time since these small potatoes roast fairly quickly and I find they do not need a pre-boil. I suggest, washing them well and leaving the skin on for added flavor. When you wash and cut them, I just toss them straight on a cookie sheet with olive oil, salt, pepper, and plenty of garlic powder.

What Can You Cook Breakfast Potatoes In?
The great part about these potatoes, is that they cook well in pretty much any oven safe container you want to use. My preferred cooking tool is a simple cookie sheet. This allows the potatoes to spread out and cook faster in the oven.
Another great method is the cast-iron skillet. If given enough time to pre-heat, the cast-iron skillet does a fantastic job at crisping your potatoes to golden perfection.
You can also use a glass baking dish, though I do not recommend since it makes for a bit of a heavier clean up since the cheese can burn to the bottom or sides. A tip is to line your baking dish with foil, which can help prevent sticking. Just make sure to add an extra tablespoon of oil if you use foil since the potatoes may stick.
Can You Make These Potatoes In The Air Fryer?
Yes, you can make these twice baked potatoes in the air fryer! You may have to to do the potatoes in a couple of batches or you can make just enough for 2 people. I suggest cutting the recipe in half if you are using the air-fryer!
How To Reheat Roasted Potatoes:
If you have leftover roasted potatoes you can reheat the potatoes in oven or microwave. If you have the convection capability on your oven, preheat your oven to 325F with the convection function. Lay your leftover in a single layer on a cookies sheet. Bake to reheat until the potatoes are sizzling and hot all the way through, about 15 minutes.
To reheat roasted potatoes in the microwave, reheat in a microwave safe container for 90-120 second or until hot. This method will not get your potatoes as crispy but is much faster than the oven method!
Ingredients for Oven Roasted Golden Potatoes with Parmesan:
Recipe: Serves 4
- 1 lb Little Golden Potatoes or similar. You can really use any type of white potato, just make sure you cut it small enough!
- 3 Tbs Olive oil You can also use melted butter, vegetable oil, or even coconut oil.
- 2 tsp garlic powder You can add extra spices too! Smoked paprika, cumin, and cayenne are all delicious when paired with paremsan.
- 1 tsp salt I use fine grated sea salt. If you use larger salt granules you may need more salt.
- 1/2 tsp black pepper Add to taste
- 1/3 cup parmesan cheese You can use pre-shredded parmesan or parmesan flakes.
- 1 bunch green onions The green onion goes really well with the parmesan. You can also use white onion if that is all you have on hand.
Directions to Make Oven Roasted Breakfast Potatoes:
Wash and Prepare the Potatoes
Preheat the oven to 350F. Use the convection function if you have the capability.
Wash and drain your potatoes. I like to pat them dry with a kitchen towel to remove excess water.
Chop the potatoes into quarters and add to a cookie sheet.
Toss with olive oil, garlic powder, salt, and pepper.
Bake until most potatoes are golden and crispy, about 35 minutes. Be sure to stir them every 10-15 minutes to ensure they toast on all sides.
2. Add The Cheese and Onion
While the potatoes cook: wash and chop your green onion into pieces. I usually go about 1/4” long .
After the potatoes have been roasting for about 35 minutes, remove and toss the green onion and cheese onto the cookie sheet. Using a spoon or spatula, mix until everything is well combined.
Put the cookie sheet back in the oven and cook until the cheese is all melted and beginning to crisp as well, about 10 minutes.
Remove from the oven and top with salt and pepper to taste, enjoy!
