Three Sourdough Breakfast Ideas with Eggs

Breakfast ideas can be hard to come up with and its easy to feel in a boring routine when you have so much to think about in the mornings! To keep my breakfasts fresh and different, I like to make sourdough toasts with different egg styles on top. These three recipes are super easy, versatile, and keep you from falling into a boring routine with breakfast.

I am going to walk you through making three different breakfasts that combine toasted sourdough with eggs cooked three different ways. These combination are so tasty that I even have these sourdough toast and egg combinations for dinner sometimes! Whether you make your own sourdough or buy it fresh from the store, sourdough bread is one of my favorite pairings with eggs, avocado, bacon, and so much more. Your mornings will never be the same after trying these different toast combinations and they will have you looking forward to breakfast everyday!

Notes and Tips for Sourdough Toast with Eggs:

  • These egg recipes can easily be made with your favorite breads or bagels! Sourdough is my favorite but feel free to substitute in any type you wish to use! Bagels are especially tasty with cream cheese and the miso butter eggs, but let me know what your favorite combination is in the comments below.

  • If you are making any of these eggs ahead, the best ones that re-heat are the miso butter eggs and the hardboiled eggs. Fried eggs do not reheat as well and I recommend making those fresh.

What is the Best Way To Eat Eggs For Breakfast:

  • The best way to eat eggs in the morning, is the way that you enjoy them the most! In this post, ill describe making eggs three different ways to give you some options on how to eat your eggs.

  • I consider scrambled eggs to the best way to eat eggs for breakfast. They are super fast to make, are versatile on what you can pair with them and you can make a large batch easily to feed a crowd. If you need to do meal preparation, as so many of us do, then scrambled eggs are a good option as they reheat well so you can still have a nice hot breakfast.

What is the Correct Way To Hard Boil Eggs?

  • Even hard boiled eggs can become overcooked. To avoid overcooking your hardboiled eggs, start with a pot of cold water. Add your eggs so that there is about 1/2” water above the eggs. This allows the eggs to cook as the water heat so that they are not temperature shocked when thrown into hot water. To your water, add 1/2 tsp salt and 1/4 tsp baking soda. If you are cooking 8-10 eggs, add 1/2 or even 1 tsp baking soda. The baking soda makes your water alkaline which should help separate the egg whites from the shell when going to peel the hard boiled eggs.

  • Just before the water is boiling, turn the heat off and let the eggs sit for 10 minutes. After 10 minutes, remove your eggs to an ice bath. This stops the cooking process and should prevent overcooking. After 10 minutes, the eggs should be ready to peel.

Do I Need To Add Milk To Scrambled Eggs?

  • The reason that people add milk or cream to eggs is to introduce fat to your scrambled eggs. This creates a creamy, almost custardy egg. That being said, my preferred fat is butter. Butter is rich, decadent, and in my opinion, much tastier than milk. You also do not need to add any fat to your eggs, if well whisked, and cooked low and slow, your scrambled eggs will turn out just as tasty!

What Makes Scrambled Eggs Taste Better?

  • To make scrambled eggs better, introducing salt prior to cooking is the easiest way to make your scrambled eggs taste better.

  • Prior to cooking, about 10 minutes, add in salt to your whisked eggs. The salt helps break down your eggs proteins so that they do not overcook and come out to dense. Similar in the way a brine helps create a more moist meat, salt in your eggs, help make tender, soft, and delicious eggs.

  • For this recipe, the miso paste in our miso butter scrambled eggs introduces salt. When combined with butter, these eggs are the most delicious scrambled eggs you will have.

  • Cooking your eggs in butter will also make them taste better. If you happen to be cooking bacon that morning, using the bacon grease is a great way make your eggs taste better.

Recipe for Sourdough Toast 3 Ways:

  • 6 slices sourdough toast You can use any bread, but sourdough tastes best!
  • 6 eggs I use 2 eggs per slice of toast.
  • 3 slices bacon, cooked. You decrease the amount of bacon if desired.
  • 1 avocado I use 1 avocado between two slices of bread.
  • 1/4 cup sundried tomatoes You can use fresh cut baby tomatoes too!
  • 1/4 cup basil pesto Store-bought or homemade
  • 1 Tbs miso paste white miso paste is preferred.
  • 1/4 cup radish sprouts This is optional but goes really well with the miso butter scrambled eggs.
  • 1 tsp sesame seeds optional, or toppping
  • 4 Tbs butter, separated. The butter is used for cooking the eggs and the miso butter scrambled eggs.
  • 1/4 tsp baking soda optional and used to boil the eggs.
  • 1/2 tsp salt to taste

Directions to Make Egg and Sourdough Toasts:

  1. Cook The Eggs and The Bacon

    1. For the hardboiled eggs, add 2-3 eggs to a pot of cold water. Add 1/2 tsp salt and 1/4 tsp baking soda to the water.

    2. Turn the heat on high and cover. Just before boiling, turn the heat off, let the steam out and then cover to let sit for 8-10 minutes.

    3. After 10 minutes, remove your eggs to an ice bath for an additional 10 minutes. Remove from the cold water, pat dry, and peel.

    4. While the eggs are in their ice bath, fry your bacon if it needs cooking. You can even save the grease to cook either the miso butter scrambled eggs or the fried eggs. Set the cooked bacon aside.

    5. For the sunny side up eggs, melt 1-2 Tbs if butter in a hot pan.

    6. When hot and bubbling, crack your eggs over the butter.

    7. Cover with a lid for 1 minute. After 1 minute, turn the heat off, remove the lid, and remove the eggs from the heat.

    8. For the miso butter eggs, prepare your miso butter by combining the miso and butter in a small bowl. Microwave for 10-15 seconds so that the miso butter is smooth and close to liquid texture. Whisk the miso butter into your eggs, and whisk until you no longer see egg white strands.

    9. To a hot skillet, melt 1 Tbs of butter. Once hot, add the scrambled eggs. Turn the heat down to low and stir your eggs constantly. Just before they are done cooking,, about 3-5 minutes, remove the eggs from the heat to allow to finish cooking off the stove

    2. Prepare The Toast

    1. Slice and toast your sourdough toast to desired toast levels.

    2. To a slice of sourdough, add a generous helping of miso butter scrambled eggs. Top the eggs with sprouts and then sesame seeds.

    3. To another slice, mash and spread some avocado. Add 1 slice of bacon. Slice a hardboiled egg into coins and add on top of the bacon. Top with salt and pepper.

    4. To an additional slice, spread pesto as a base. Add a fried egg. Add sundried tomatoes and then top with parmesan cheese.

    5. Make as many as needed and enjoy!
