Whenever I am on a gluten free cookie kick, these browned butter peanut butter cookies are my go-to! They are an easy one-bowl cookie recipe that not only tastes so delicious for a gluten free dessert but is also so easy to make!

Peanut butter combined with browned butter, oats, and almond flour is a match made in heaven! Paired with a large helping of chocolate chips, these cookies are an actual dream! My favorite way to enjoy them is stored in the freezer and paired with a hot cup of coffee or a small scoop of my favorite ice cream. You can also bring these as a post work out snack or even on hike. The almond flour and oats help these cookies feel a little more filling and almost like an oat bar!

  • Gluten free cookies do not always stay together as well as regular cookies and to help hold these cookies together, I use tapioca starch. Feel free to use 1:1 cornstarch instead of tapioca starch for these cookies.

  • If you do not have quick cook oats, just blitz regular rolled oats in a food processor until you have a quick cook oats consistency. The oats help hold the cookies together and give them a nice texture.

  • I use no-stir peanut butter for these cookies. To help make the peanut butter easy to stir, I drop it in the butter once it is close to browned or has browned and let it heat up a bit.

  • You can for sure make these cookies with regular flour! Replace the almond flour with 3/4 all purpose flour. If the dough seems really wet, add in an extra 1/4 cup and then let the dough chill for about 30 minutes prior to scooping it out. Adding to much flour can make your browned butter peanut butter cookies too caky and dry.

Recipe: Makes 12 Cookies

  • 1/4 cup butter Unsalted butter is best since we add salt in.
  • 1/3 cup no stir peanut butter If you only have the natural peanut butter on hand, add in an extra tsp of tapioca flour.
  • 3/4 cup Quick Oats You can also blitz rolled oats into quick oats!
  • 1 cup almond flour Blanched almond flour is best.
  • 2 tsp tapioca flour The tapioca helps hold the cookies together
  • 1/4 cup brown sugar Light or dark will work the same.
  • 4 tsp granulated sugar The sugar adds sweetness and helps binds the cookies once cooled.
  • 1 egg The egg helps bind the cookies together!
  • 1 tsp vanilla
  • 1/2 tsp almond extract The almond extract adds an additional note of nuttiness and compliments the peanut butter.
  • 1/2 tsp salt The salt helps balance the sweet.
  • 3/4 tsp baking powder The baking powder and baking soda add slight lift to the cookies. Gluten free cookies do not rise as much as regular cookies but the leavaners help give the traditional cookie feel.

How To Make Browned Butter Peanut Butter Cookies:

  1. Make the Cookie Dough

    1. Preheat the oven to 350F

    2. Over medium-low heat, melt and brown the butter in a small sauce pan. Butter is browned when it turns light brown and is slightly frothy. Since there is only 1/4 cup butter in this recipe, it will brown fairly quickly.

    3. Remove from the heat and add the peanut butter. Stir to combine.

    4. Add the sugars and stir to combine.

    5. Add the egg, vanilla and almond extract and mix to combine

    6. Add the salt, baking powder, baking soda, and tapioca starch. Mix to combine.

    7. Slowly add the oats and almond flour in 1/2 cup increments each, stirring in between.

    8. Stir in the chocolate chips or any other add-ins you want to use.

  2. Bake the Cookies

    1. Line a baking sheet with parchment paper.

    2. Using a cookie scoop or spoon, add 1 inch balls of cookie dough to the baking sheet.

    3. Bake until the edges are just turning golden brown, about 9-10 minutes.

    4. Remove and let sit for a few minutes before removing them to a cooling wrack.
