Notes and Tips for Almond Flour Oatmeal Cookies:

  • Gluten free cookies do not always stay together as well as regular cookies. I use tapioca starch to help hold these cookies together, and it works! Feel free to use 1:1 cornstarch instead of tapioca starch for these cookies.

  • If you do not have quick cook oats, just blitz regular rolled oats in a food processor until you have a quick cook oats consistency.

  • Use blanched almond flour for this recipe. This is a smoother almond flour than natural almond meal. Almond meal is made from whole ground almond which will have the skins of the almonds included. You can use almond meal but your cookies may be crumbly and not hold together as well.

Common Questions Almond Flour Oatmeal Cookies:

How Does Almond Flour Affect Cookies?

  • Almond flour in cookies adds flavor and bulk. Almond flour is made from ground almonds so there is no wheat, which means your cookies will not rise or spread as much. The almond flour is a great gluten-free option for baking since it tastes a little nutty and has less carbohydrates than regular flour.

  • To help these cookies spread a little bit, I combine the almond flour with some leavening agents and quick cooked oats that help give that traditional cookie feel.

What Can I Add To Almond Flour Oatmeal Cookies?

  • You can add a lot of different fun things to almond flour oatmeal cookies! I add chocolate chips because I love traditional chocolate chip cookies! Baked chocolate chips are one of my favorite textures both hot out of the oven and cooled.

  • You can add vanilla or almond extract for extra flavor. I choose almond extract to add a nutty addition that pairs so well with the almond flour!

  • You can also add dried fruit or nuts to almond flour oatmeal cookies! It will make these cookies feel like a baked oatmeal treat that is perfect for kids after-school snack or a hiking energy bar. If you add something fun to your cookies, let me know in the comments below!

What Is The Texture of Almond Flour Oatmeal Cookies?

  • The texture of almond flour oatmeal cookies is crunchy on the outside and soft on the inside. The baked almond flour gets toasted and will give you a little crunchy outside when cooled. The oat flour will keep the cookies soft and will give a little texture since the oats will stay chunky.

  • If you bake the cookies for longer, they will be crispier. A crispier cookie is perfect dunked in coffee or milk!
