Baked egg dishes are one of those, do-it-all dishes that check all the requirements for a good breakfast. These bean and chorizo baked eggs are a great bean and chorizo recipe that is a little spicy, high in protein, and super easy to make quickly! Breakfast should be flavorful and delicious and this recipe sacrifices none of the flavor!

Bean and Chorizo baked eggs are one of my favorite combinations. It is a creamy from the beans, spicy from the chorizo, and paired with eggs, avocado, and cilantro, you will love making this all the time for your morning meal! The Spanish style chorizo is a cured or raw sausage that goes great with refried beans, avocado, and cilantro.

This breakfast will be a great savory recipe that you will love enjoying any day of the week!

Notes and Tips For Bean and Chorizo with Eggs:

  • Pre-seasoned chorizo is a great option and the easiest way for making this recipe faster! Pre-seasoned chorizo usually comes as un-cooked pork sausage that you can find in most grocery stores. Different chorizos will come with different spice levels, be aware of how spicy some are and what you prefer to eat.

  • Canned refried beans are another way to make this dish easier and faster. I prefer the Siete Brand Refried beans but any brand will do.

  • If you want to get ahead, you can cook the chorizo the day before or even a couple of days in advance. When ready to complete the dish, add to an oven safe dish with a little oil and then complete the recipe as normal.

What to Pair with Beans and Chorizo?

  • There are lots of pairings for the savory and spicy notes of beans and chorizo. The eggs and avocado are a creamy addition that cuts the spice of the chorizo really well. I have also listed out some other pairings that are great flavors for a more robust breakfast.

  • A sweet addition is my Browned Butter Cardamom Muffins or my Matcha Banana Bread! Both are easy to make and can be baked the night before for fast serving in the morning.

  • Banana and Buckwheat Pancakes can be served on the side for a bit of a bready addition that is gluten free and healthy!

  • Twice Baked Breakfast Potatoes are a great pairing with this bean and chorizo dish. They are the perfect base and can be prepared the day before and heated just for serving!

What Type Of Beans To Use for Beans and Chorizo with Eggs?

  • You can use whole beans or a refried style bean. My favorite type is the Siete Brand Refried Beans that are available at most grocery stores. They are a healthy version of refried beans that require no effort or preparation!

  • If you want to use whole pinto or black beans, that is also an easy option for beans. The beans will maintain slight texture when cooked and will be a little more firm than a refried style bean that I typically use. You can throw some spices in with any canned beans. Try cumin, paprika, red pepper, or smoked paprika!

What Else Can I Add To Beans and Chorizo?

  • Other than eggs, avocado, corn, and cilantro there are many other toppings that you can add to your beans and chorizo.

  • Try adding some enchilada sauce once the chorizo is cooked to make this a Shakshuka style egg dish. You can also add tomato sauce and onions for a less spicy version of this.

  • Try topping this dish with sour cream and cheddar cheese for something much more filling but very delicious when it comes out of the oven.

  • You can also serve this dish with your favorite corn or flour tortilla and make little tacos for your breakfast! This is my favorite way to serve beans and chorizo with eggs on the weekends.

Ingredients For Bean and Chorizo Baked Eggs

Recipe: Serves 2

  • 1/2 Lb Chorizo I use uncooked pork chorizo that comes spicy.
  • 1/2 Can Refried Beans See notes above for other bean ideas!
  • 4 Eggs Feel free to increase the number of eggs based on how many people you have eating and how hungry you are!
  • 1/2 cup frozen corn kernels The corn adds a little sweetness and a little crunch. Feel free to leave it out if you do not have it.
  • 1 Avocado Sliced, for serving
  • Handful of Cilantro Lightly chopped, for serving.
  • Salt and Pepper to taste

How to Make Bean and Chorizo with Eggs

  1. Cook the Chorizo

    1. Preheat the oven to 350F

    2. To an oven safe skillet, cook the chorizo until browned, about 4 minutes. TIP: If you chorizo releases a lot of oil, you can dab it out lightly with a paper towel.

    3. Add the beans and corn and mix until lightly combined and allow to saute for about 1 minute.

2. Add and Bake the Eggs

  1. To the pan with the beans, chorizo, and corn crack the eggs over top.

  2. Place in the oven and bake until the eggs are just set. About 4-5 minutes.

  3. Remove and top with avocado, cilantro, salt, and pepper!

  4. Serve alongside toast, potatoes, or tortillas!
