Mixed Berry Galette with Whipped Cream!

If you are like me then you will love having a recipe for a summer berry dessert that tastes like but is way easier than pie! I like to think of Galettes as an open faced pie that are super fun to make since their shape is naturally rustic. Galettes are a fun to way to bake since you can put basically any fillings, both sweet and savory inside of them. My summer berry galette uses strawberries and blueberries as the filling to make a bright, sweet, and delicious galette that is sure to impress everyone. I top my summer berry galette with fresh whipped cream that is the perfect amount of sweet and finishes off this summer dessert really well. Once you start making galettes, you will definitely be making them year round since they are so easy, tasty, and fun.
Notes and Tips for Summer Berry Galettes:
The great thing about galettes is that you do not have to pre-bake the crust as you do with a pie. To avoid a “soggy” bottom as the wonderful Mary Berry would say, you can dust or line the un baked galette crust with quick oats which will absorb any moisture the fruit releases.
Another great lining for the galette is crushed almonds or almond flour. The nuts even add a little texture and nuttiness to the galette!
If you are using frozen berries, I recommend not defrosting them prior to baking. If you allow them to defrost they will release a lot of water and get really mushy. Toss with the sugar and lemon and bake directly.
Fresh berries are best for this recipe, especially if you are cooking this in the summer when fruit is in season and just begging to be eaten.
I dust my crust with egg and brown sugar to give a really golden look. If you have muscovado or larger grain sugar, that will look really nice since the granules will hold their shape.
What Makes A Galette a Galette?
A galette is the french term for flat round cake, which makes sense for these delicious pastries.
Galettes are free form, and rustic looking, with hand rolled dough that is hand shaped around whatever filling you decide to use. A lot of galettes are sweet, but many are also savory which are so delicious as well!
What Other Fruit Goes in a Galette?
Though blueberry coffee cake is my favorite, because I love fresh blueberries, You can add in different fruits that cater to taste or season.
Blackberries or raspberries are an easy fruit since they are similar in size. If you use blackberries, I recommend an extra half cup because they are larger than blueberries.
You can also leave blueberries or any berry out all together if you prefer. No berries leaves you with a tender and delicious cake that still tastes great and goes with a hot cup of coffee.
Is Galette Crust the Same as Pie Crust?
For some galettes, yes the dough is the same. You can make galettes, however, with basically any pastry dough.
My crust I use for this galette recipe is a basic short crust made with flour, butter, and water as the main ingredients. I add in a little vanilla extract, and sugar to slightly sweeten the crust since this is a dessert recipe.
Tips for Fluffy Homemade Whipped Cream:
Airy whipped cream is actually very easy to make at home if you have a stand mixer. It is as simple as adding heaving whipping cream to the mixer and mixing until your cream becomes light and airy.
Using heavy whipping cream is best since it holds its fluffiness well compared to heavy creamy, which has a higher fat content. Heavy whipping creamy as about 34% fat, while heavy cream is 36%. I also do not recommend using half and half which does not have a high fat content (around 10%) compared to heavy whipping cream.

Recipe for Summer Berry Galette: Crust
- 1 1/2 cups of flour
- 3/4 cup butter
- 1 tsp sugar
- 1 tsp almond extract
- 1/2 tsp salt
- 1/4 cup to 1/3 cup cold water
Recipe for Summer Berry Galette: Filling
- 4 cups fresh berries of choice
- 1/3 cup granulated sugar
- zest of 1 lemon
- Juice of 1/2 lemon or 1 Tbs lemon juice
- 1/2 tsp salt
Recipe for Homemade Whipped Cream
- 1 cup heaving whipping cream
- 2 tsp granulated sugar
How To Make A Mixed Berry Galette:
Prepare the Crust:
To a food processor, add half the cubed butter and half of the flour. Blitz until lightly combined.
Add the rest of the flour, butter, almond extract, 1/2 tsp salt, and 1 tsp of sugar, and blitz 1-2 times to combine.
Using ice cold water, add 1 Tbs at a time until your dough is just combined. I usually use about 1/3 cup but go slowly so you do not over add water.
Remove from the food processor and wrap in plastic wrap. Place in the fridge to chill while you prepare the filling.
Prepare the Berry Filling
To a large bowl, add 4 cups of freshly washed and chopped berries.
To a separate bowl, zest 1 lemon. Add the sugar and pinch together until the lemon sugar is the texture of sand.
Add the lemon sugar to the berries, the salt, and add in the juice of 1/2 lemon.
Mix until all the berries are coated. with sugar.
Assemble and Bake the Galette
Preheat the oven to 350 F
Remove the dough from the fridge. On a floured surface, begin rolling your dough until you have a rough circle between 16” to 18” that is 1/4” thick.
Place your dough on a baking sheet covered with parchment paper. If you do not have parchment paper, you can lightly butter and flour the surface.
Spread the quick oats in an even layer to the middle of your dough.
Spoon the fruit over the oats. I use a slotted spoon to avoid adding excess liquid that may have accumulated in the bottom of the bowl.
Fold the dough over the berries to form about a 4” crust. The dough can overlap in places and the center 12” of your berries will be exposed.
Brush the crust with egg and brown sugar.
Bake at 350 F for 45-50 minutes or until the crust is flaky, golden, and lifts easily from the cookie sheet.
Prepare the Whip Cream
To a stand mixer, add in the whipping cream and sugar. Set the mixer on medium. Let mix until the cream starts to form peaks, about 3 minutes depending on the mixer and type of cream.
Turn the stand mixer on high and continue to mix until stiff peaks are formed and the whipped cream is light and airy, about 1 minutes.
Add a lot of whipped cream to your galette and enjoy :)
