Easy Roasted Corn Pasta with Lemon and Basil
I do not eat corn often, but when I do, I love to bring out the natural sweetness of this robust fruit by roasting it. Once my corn is so sweet and delicious, I love to combine it with a lemony pasta and fresh basil like I do in this lemon pasta recipe. Lemony pasta is one of the brightest pasta dishes you can make, using a lot of lemon juice, lemon zest, and cheese to make an easy and delicious pasta dish that will bring a smile to your face. This recipe also uses fresh basil to add fresh and herby flavor! All combined, the corn, lemon, and basil are some of the most simple but flavorful ingredients that you will have on repeat for your pasta night!

This dish is a great meal prep option. The lemon and corn pasta flavors get better after a few days and even reheat really well for lunch or dinner. If you plan to use this as meal prep dish, I recommend saving some of the fresh basil by wrapping it in a paper towel in a sealed container. This will help keep it green so you can have fresh basil with each serving.
Do not forget to save your pasta water! The pasta water is what helps create a creamy dish as it emulsifies with the lemon juice and butter. If you drain your pasta and forget the pasta water you can just use warm water or even a little chicken broth or stock to help add flavor.
You can make this dish in a stainless steel skillet or a non-stick pan. Both will perform well and unlike some dishes, it does not really matter so use what you have on hand or what you are most comfortable with.

I love using penne pasta for this. It is a great texture that goes well with the roasted corn in each bite. If you do not have penne pasta, I also like spaghetti noodles since they are fun to slurp up!
In truth, you can choose any type of pasta for this dish, penne is just my favorite.

How To Roast Corn?
Corn can be roasted to bring out its natural sweetness in many different ways. If I do not plan on grilling my corn, I like to roast it in the oven with salt, pepper, and olive oil. this method is super easy and creates a lot of flavor!
You can also shave the kernels off the cob and toss them in a skillet without cooking them before. This will give the corn a little saute flavor that is so good.
Of course, a grilled corn will not only make a nice sweet corn but will give that subtle smokiness that can only be created on a grill. All methods work for this pasta recip. Let me know what your preferred method is in the comments below!
Is Fresh Basil Worth It?
Fresh basil is so worth it! The flavors of fresh basil with lemon is one of the best combinations! It is bright, herby, and so worth it. I like to buy fresh basil from my local Asian market since it comes in such large quantities which means this pasta recipe can be filled with basil flavor. Recipe for Corn Pasta with Lemon and Fresh Basil
- 8-10 oz penne pasta
- 3 corn cobs or 1 cup corn kernels
- 1/4 cup olive oil, divided, for roasting and sauteing
- 1 cup fresh basil, roughly torn
- 1/2 cup pasta water
- Zest and juice of 1 lemon
- Salt and Pepper, to taste
- 1/4 cup parmesan cheese, for serving
Instructions:
Roast the Corn
Preheat the oven to 350F
Shuck the corn and place on a baking sheet
Drizzle with 1-2 Tablespoons of olive and sprinkle with salt. Rub the oil and salt over the ears of corn so all are well coated.
Roast in the oven until fragrant and sweet, about 20 minutes.
Remove from the oven to cool.
Cook the Pasta
Bring a medium pot of water to a boil. Once boiling, add the dried pasta and 2 tsp of fine salt to the water.
Cook to aldente according to package instructions. Be sure to set aside about 1/2 cup of pasta water.
Drain the pasta, and set aside to combine later.
Sauté and Combine
Remove the corn from the cob by slicing vertically down to remove the kernels easily, set aside
Roughly tear your basil, set aside
Heat a medium skillet over medium heat with a couple tablespoons of olive oil.
When hot, add the corn, pasta, and a pinch of salt. Sauté for a few minutes.
Zest and juice the lemon over the pasta and corn, stri together.
Stir in the basil and allow to wilt, about 2 minutes.
Add in 1 tablespoon of butter and mix until melted and everything is well covered.
Serve with parmesan cheese, salt, and pepper.
