Recreating one of my childhood favorites is this chicken pot pie with phyllo dough. Though the one I remember is the frozen version from the grocery store, the gooey center topped with flaky pie crust is a fond memory that I worked hard to recreate. This version of chicken pot pie is simple, comforting, and topped with phyllo dough instead of pie crust. It is all the components of the childhood favorites, but is combined with my upgrades and additions.

This chicken pot pie is made with phyllo dough. A flaky pastry dough that you can buy right from the store, it is placed on top of the filling prior to baking. This is my favorite way to top my chicken pot pie since it makes serving a breeze, and the texture of the flaky pastry dough is so fun!

This chicken pot pie is great for meal prep, a large dinner party, or as a cozy meal for yourself. It is easy to make and I know you will love this recipe for your dinner rotation.

Notes and Tips For Chicken Pot Pie with Phyllo Dough

  • I call for rotisserie chicken since it comes seasoned, already cooked, and is easy to buy and process a few days in advance. You can use cooked chicken breast too if you prefer.

  • You can use red or white wine for this recipe. Though most recipes call for white wine, red wine is a great option for making the filling feel heartier and warmer. Red wine will create a deeper flavor while white wine is brighter and lighter.

  • This dish uses chicken breast that is season and pan-seared before being mixed into the pasta. Chicken breast pairs well with the other flavors and reheats well with this dish.

Where Can I Buy Phyllo Dough?

  • Phyllo dough can be found at most grocery stores in the freezer section. Look for the isle that sells frozen desserts like ice cream and pie. If you can not find phyllo dough, a great option is frozen puff pastry. You can leave this un-topped, or use your favorite cracker as a topping.

What Else Goes In Chicken Pot Pie?

  • You can use different meats for this pot pie recipe. Leftover turkey is a great option as it the filling tends to be so moist.

  • For a heartier addition, try using bacon and cooking the veggies in bacon grease. Though an extra step, this will add so much flavor and is one of my favorite ways to prepare this dish when I have time.

  • Other vegetables that go great in chicken pot pie with phyllo dough are mushrooms. A natural source of Umami, mushrooms add juice, flavor, and texture.

Can I Use Frozen Vegetables for Chicken Pot Pie?

  • You can definitely use frozen vegetables! I like to use frozen peas because I always have a bag on hand and they are convenient. You can use frozen carrots, or the multi-vegetable pack that contains peas, carrots, and corn.

  • Green beans, if you want to use them, are also a commonly frozen vegetable that would work.

  • If you are using frozen vegetables, they may add more water to the dish as they defrost. Allow a few extra minutes of saute time so that they water has a chance to evaporate.

  • This pot pie recipe is a warming and filling meal. It goes wonderfully with salads, light vegetables, or even a soup served on the side. I have listed a few of my favorites below.

Ingredients for Puff Pastry Chicken Pot Pie

Recipe: Serves 4

  • 1 cup chopped carrots 1-2 medium carrots
  • 1 cup chopped celery 2 large celery stalks
  • 1/2 cup chopped onion 1 small onion, or 1/2 large onion
  • 1/2 cup frozen peas These can remain frozen until add. They will cook in the oven.
  • 2 Tbs butter or oil For sauteing the vegetables
  • 8 oz shredded chicken You can use rotisserie chicken or leftover turkey breast.
  • 1 1/2 cups vegetable stock You can also use chicken stock.
  • 1/2 cup red wine White wine works well too.
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp garlic powder Fresh garlic is great too.
  • 2 Tbs all purpose flour Optional, but helps thicken the filling.
  • 1/2 tsp black pepper
  • 1/2 tsp salt to taste
  • 2 Phyllo Dough Defrosted. Sub frozen puff pastry if desired
  • 1 egg this is for the egg wash, you can also use cooking spray.

How To Make Chicken Pot Pie with Phyllo Dough

  1. Prepare the Vegetables

    1. Preheat the oven to 350 F or to the temperature stated on the phyllo package.

    2. Remove the phyllo dough from the wrapper, set aside.

    3. Chop the carrots, onion, and celery.

    4. To a large pan, add the butter. When melting and just bubbling, add the carrots, onion, and celery.

    5. Add a pinch of salt and stir to combine.

    6. Allow to saute 2-3 minutes until the onion is starting to turn translucent.

    7. Add the spices and flour. Stir to combine.

    8. Deglaze the pan with prepared stock and wine. Be sure to scrape the pan bottom as you mix to bring all the good bits off the bottom.

  2. Add the Chicken and Bake

    1. Add the shredded chicken and the frozen peas. Stir to combine.

    2. Transfer to an oven safe dish and spread evenly.

    3. Cut your defrosted dough into squares and top the filling with phyllo squares.

    4. Brush with egg wash, or spray with cooking spray.

    5. Bake until the phyllo is puffed and flaky.

  3. Serve and Enjoy

    1. Remove to cool and serve with extra salt or pepper.

    2. Enjoy!
