Three Oatmeal Recipes Made with Coconut Milk

Breakfast should never be boring and when I make oatmeal, I like to make it as flavorful as possible. Oatmeal is a classic breakfast but can often be overlooked for a filling and healthy option! My 3 favorite recipes for morning oatmeal are easy recipes for oatmeal that are the opposite of boring! Why Oatmeal?

Oats are super nutritious, filling, and easy to make. They are a versatile ingredient that you can find in any store and make the most cozy and filling morning bowl of cereal. These recipes for blueberry peanut butter, apple cinnamon, and pear walnut oatmeal will have you wondering why you have not had more oatmeal before!

How Do You Make Oatmeal Taste Good?

  • My secret to really good oatmeal is to add vanilla, salt, and cinnamon to the coconut milk as the oats cook. The flavors will infuse with your oats and be just so much better.

  • The toppings you add to your oatmeal will also make your oatmeal taste good. Toppings like berries, honey, and toasted nuts are a healthy and tasty way to make your oatmeal taste good.

Is Oatmeal Gluten Free?

  • Oats are gluten free. Some oats are processed in facilities with wheat products, however. If you need to adhere to a strict gluten free diet, look for the Gluten Free label on your oats. Like Bob’s Red Mill Gluten Free Oats but let me know your favorite brand in the comments below!

Can I Make Oatmeal the Day Before?

  • You can definitely make oatmeal the day before. You can heat cooked oatmeal up with a splash of milk or water and then reheat in the microwave in 15-20 second increments.

  • You can also soak you oats overnight. In oatmeal recipes where I use buckwheat, this method is especially good since it helps break down the groats to be tender and edible.

How Do You Add Protein To Oatmeal?

  • Adding protein to your oatmeal helps keep you fuller for longer without needing extra snacks before lunch time!

  • You can mix in your favorite protein powder to your oatmeal. Though this can add a flavor sometimes, it is also the easiest way to add protein.

  • Make the oatmeal with yogurt. If you mix in some Greek Yogurt or your favorite type of yogurt before serving, you will increase the protein and make your oatmeal creamier!

  • Drizzle with nut butter. Almond butter and peanut butter has protein and both taste so good with oatmeal.

  • My favorite way to increase protein when serving oatmeal is just to serve it with eggs! It adds variety to your meal and is a healthy protein! Let me know your favorite way to add protein to your oatmeal in the comments below!

Can I Use Frozen Fruit In My Oatmeal?

  • Yes! Frozen fruit is great in oatmeal as when it is heated up becomes almost syrupy. I recommend heating frozen fruit on the stove by throwing the frozen berries into the coconut milk or water just before you add the oats in.

Can I Make Oatmeal in the Microwave?

  • Yes! The microwave is such a fantastic tool for making oatmeal. I add water to oats and when microwaved in 20 second increments, your oatmeal will be ready to eat in no time!

  • The microwave does really good job at cooking your oats and is the fastest method. It does lack a certain creaminess but sometimes mornings are a rush!

Can I use Instant Oats Instead Of Rolled Oats?

  • Yes you can use instant oats for these oatmeal recipes. Keep in mind that rolled oats require more liquid and take a little longer to cook than instant oats. I recommend using boiling water or heating the coconut milk up and pouring over a bowl of instant oats until just covered. You do not want to over add liquid or you may have a mushy mess!

Recipe for Blueberry and Peanut Butter Oatmeal

  • 1/3 cups Rolled Oats
  • 2 Tbs Buckwheat Groats
  • 1 cup boiling water or coconut milk
  • 1/2 cup blueberries
  • 2 Tbs Peanut Butter
  • 1 Tbs honey
  • 1 tsp chia seeds
  • 1/2 tsp cinnamon
  • punch of salt

Recipe for Apple Cinnamon Oatmeal

  • 1/2 cup Rolled Oats
  • 1 cup coconut milk
  • 1/2 Honey Crisp Apple or apple of choice
  • 1 Tbs Honey or maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup pecans

Recipe for Pear and Walnut Oatmeal

  • 1/2 cup Rolled Oats
  • 1 cup cup coconut milk
  • 1/4 cup walnuts
  • 1 Tbs salted butter
  • 1 Tbs brown sugar
  • 1/2 pear of choice
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Pear and Walnut Oatmeal with Brown Sugar

How to Make Blueberry and Peanut Butter Oatmeal:

  1. Add the oats and buckwheat to a bowl. Cover with boiling water. There should be about 1/4 inch of water above the oats and buckwheat.

  2. Cover and let sit for 5 minutes. See Above for microwave method.

  3. Once the water has been absorbed by the oats and buckwheat groats, add with the peanut butter, chia seeds, honey, cinnamon, and salt. Stir until combined.

  4. Top with blueberries and enjoy!

How to Make Apple Cinnamon Oatmeal:

  1. In a pot over medium heat, bring the coconut milk to a low simmer.

  2. Add the Oats, vanilla and salt. Turn the heat to low and stir.

  3. Allow the oats to cook for a 5-7minutes or until soft and 90% of the liquid has been absorbed.

  4. While the oats are sitting, add the pecans to a skillet over medium heat. Toast the pecans with for a few minutes until just turning in color and very fragrant.

  5. Add the nuts to the oats.

  6. Chop the apple and add to the oats and nuts.

  7. Add a generous amount of cinnamon.

  8. Drizzle with maple syrup and enjoy!

How to Make Pear and Walnut Oatmeal:

  1. In a pot over medium heat, bring the coconut milk to a low simmer.

  2. Add the Oats, vanilla, and salt. Turn the heat to low and stir.

  3. Allow the oats to cook for 5-7 minutes or until 90% of the liquid has been removed.

  4. While the oats cook: Reduce the pears: add them to a skillet over medium heat with the butter, brown sugar, spices, and salt.

  5. Once the sugar is dissolved, add the walnuts and turn the heat to low and cook until the pears are soft.

  6. Combined with the oats and nuts, enjoy!
