I love bagel sandwiches, they are versatile, filling, and super delicious. This recipe for loaded bagel sandwich with egg and lox is truly one of my go to breakfasts that I make on repeat. It is really fast to make, and can be a weekend treat or a weekday breakfast made to go. The egg and lox make this a high protein bagel breakfast that will keep you full and happy all morning! The bagel fillings are also really versatile and will go with any type of bagel you want to use! Never have a boring bagel breakfast sandwich again with this lox bagel sandwich.

To pack a bagel sandwich you can wrap the loaded bagel with parchment paper and then in foil. This helps prevent a lot of moisture build up in the foil as the paper should absorb most of it.

  • You can also just wrap the bagel in a paper towel and then place it in a ziploc bag. The paper towel will do the same as the parchment paper and the bag is an easy transport option.

  • You can store leftover or unused bagels in a ziploc bags! This helps them stay moist for when you are ready to use them. I recommend buying and using bagels within about 1 week or you may find they get pretty dry.

  • You can toast a bagel and eat it later. When you toast a bagel and let it sit out, you may find that it dries out and will require a little reheat with an extra layer of cream cheese.

  • If you toast your bagel, apply butter or cream cheese and then want to eat it later you may have some parts that are a little soggy where the butter or cream cheese has soaked in.

Can You Freeze Lox?

  • If you have leftover Lox you need to save, you can freeze it for later use! Either in a freezer safe container or vacuum sealed for freshness, frozen Lox will last in your freezer for 4-6 months.

Ingredients For Lox Bagel Sandwich

Recipe for Loaded Bagel Sandwich with Egg and Lox

  • 1 bagel of choice I love using everything bagels or sesame seed bagels. Other great flavors include cheddar bagels, plain bagels, or poppyseed bagels!
  • 1 egg: You can fry more than 1 egg if you want a super big breakfast! You can also use scrambled eggs or sliced hardboiled eggs.
  • 1/2 Tbs butter: This is for frying the egg. Feel free to use olive oil or oil of choice
  • 2 oz Lox You can find Lox at most grocery stores near the deli or meat counter. If you can not find Lox, you can use smoked salmon. Most packages will be 4 oz of lox, making doubling this recipe for 2 very easy!
  • 1 Tbs cream cheese You can definitely use more! I like using cream cheese and butter
  • 1/2 Tbs butter This is for spread on the other half if your bagel!
  • 1 small handful micro greens: These give great texture and nutrients. Feel free to use spinach or lettuce too!

Directions For Lox Bagel Sandwich with Egg

  1. Toast the Bagel

    1. Cut and toast your bagel to the desired level of crispiness. I love my bagels with a little darker color, but level of toasting is a personal preference!

    2. To your toasted bagel, spread cream cheese on one side and butter on the other. I use about 1 Tbs of cream cheese and 1/2 Tbs of butter. The butter and cream cheese add moisture and help hold all the ingredients together.

    3. Add the lox. You can also sub out smoked salmon here, or even lunch meat of some kind.

  2. Fry the Egg

    1. To a skillet, add 1/2 Tbs of butter. When bubbling, crack the egg in and allow to cook until the white is solid but the yolk is still undercooked, about 90 seconds.

    2. Using a spatula, flip the egg to cook the yolk side. Allow to fry an additional 2 minutes for a full cooked yolk, or pull it off slightly sooner if you want a runny yolk. You can also flip the egg with just a wrist flick if you are feeling ambitious!

    3. Remove from the skillet and place directly on your bagel. I use a spatula to scoop the egg out and onto the bagel.

    4. Add the microgreens. I usually add a generous handful but you can add more or less. I have also made this sandwich with spinach and spring mix too!

    5. Cut in half and enjoy! Serve with fruit, coffee, or extra eggs!
