Easy Morning Porridge with Peanut Butter

Breakfast is one of the best moments during the day. It is the start of something new and the best mornings start with a great breakfast. This porridge with peanut butter is not only a great way to start the morning, but it is also filled with healthy flaxseed, dried cherries, and is topped with thinly sliced apples. It is sweet, filling, and so easy to make.
This porridge with peanut butter is made with un-hulled flaxseed and oats to help create a great tasting breakfast that highlights the natural nuttiness of flaxseeds. This recipe uses whole flaxseed, they look like little brown seeds and are full of delicious nutrients! It is also made with no-stir peanut butter. Peanut butter is an easy addition to oats that adds so much creaminess and helps keep you full.

Notes and Tips For Porridge with Peanut Butter
Porridge with peanut butter can also be made as overnight oats. The flaxseed and oats are added to a jar with coconut milk or water, honey, cinnamon, and the apples and peanut butter are added freshly sliced in the morning.
This porridge can be made with any type of milk, I prefer coconut milk since it has a great flavor and a little extra creaminess. Feel free to use whole milk, almond milk, or even just water depending on your needs. If you want something a little lighter, I recommend just using water to make the oats and the flaxseeds. For weekday breakfasts, I use mostly water based porridge since I will be adding flax and peanut butter.
You can use any fruit for this porridge with peanut butter. I love dried cherries and apples but you can use berries or bananas too!
Why Put Flaxseeds in Oatmeal?
Flaxseeds are made mostly of fiber, with only about 1/3 of the flaxseeds consisting of carbohydrates. This makes them a great addition and use in morning oats like this porridge. The flaxseeds help lower the overall carbs in this recipe but will help keep you full all morning!
This porridge uses 2 Tbs of whole flaxseeds to make them the star of the show! Flaxseed has a slightly earthy taste and when cooked down with the oats and water, the flaxseeds soften for easy digestion and eating.
What Else is in Porridge with Peanut Butter?
This recipe uses rolled oats, cinnamon, peanut butter, dried fruit, honey, and fresh apples. These ingredients add a ton of flavor with my favorite additions being the dried cherries and nut butter. You can use any type of dried fruit, fresh fruit, and sweetener for flaxseed porridge. Instead of honey, you can use maple syrup or leave the sweetener out all together. There is a natural source of sugar from the apples and dried cherries.
When deciding what to put in your porridge with peanut butter, select toppings that you enjoy, will keep you full, and that go together! During the summer is a great time to add berries instead of apples, and during fall I like to add pears. You can also add chia seeds, pumpkin seeds, and sunflower seeds for added nutrients.
Can Porridge with Peanut Butter Be Made in the Microwave?
Since I often throw this breakfast together quickly, I actually make this meal in the microwave 9 times out of 10. It is the easiest method, requires no clean up, and makes this breakfast super fast for your morning routine.
You can also make these morning oats on the stovetop by simmering them in coconut milk, water, or any milk you want. This is the same method I use for my Three Oatmeal Breakfast Ideas and this is a great way to add flavor to your oats and flaxseeds! You can add vanilla, almond extract, a little butter, or any spices you want while the oats are bubbling. This method takes a little longer but is also a little creamier!
What To Serve With Porridge with Peanut Butter?
Porridge with peanut butter works well for a light breakfast, an easy mid morning snack, or paired with other breakfast items for an even larger start to your day. I have listed some of my favorite pairings for flaxseed porridge.
A Savory Mushroom and Leek Frittata or a Sweet Potato, Bacon, and Arugula Frittata are delicious egg breakfasts that would go great with a big bowl of peanut butter topped oats, fruit, and flaxseeds.

Ingredients For Porridge with Peanut Butter
Recipe: Serves 1
- 2 Tbs whole flaxseeds Look for un-hulled flaxseeds.
- 1/3 cup rolled oats Rolled oats will be best since they will have a similar cook time to the flaxseeds.
- 1 cup water Or any milk or milk alternative
- 1 tsp cinnamon You can also add nutmeg, a little vanilla, or cardamom.
- 2 Tbs Dried Cherries Any dried fruit will work!
- 1 Tbs Peanut Butter Almond butter works great too!
- 2 tsp honey The honey adds a touch of sweetness and is so good.
- 1/2 Apple Save the leftovers for another serving or a snack!
- dash of salt
How to Make Porridge with Peanut Butter
Cook the Oats and Flaxseeds
To a bowl, add the oats and flaxseeds with enough water or milk to just cover the oats and seeds.
Microwave in 30 second increments until the oats are softened all the way through and the water has evaporated. This usually takes about 3-4 rounds of microwaving. NOTE: I do not suggest microwaving the oats and flaxseeds all at once. This may cause them to bubble over and create a mess!
Once cooked, remove to cool.
2. Add Toppings
Chop the apple and add it to the oats and flaxseeds.
Add cinnamon and a dash of salt.
Drizzle with honey, and a healthy amount of peanut butter.

How To Store Leftover Porridge with Peanut Butter:
This porridge can be stored in an airtight container for a couple of days after making it. To reheat it, add a couple of tablespoons of water or coconut milk and reheat in the microwave in 30 second increments. The apples are quite good warm and you can add some fresh cut ones for a variance in texture!
