These pancakes are super easy and very fast to prepare. My favorite part is pairing them with a reduced apple cinnamon syrup that contains chunks of apple, brown sugar, and butter. This makes for an indulgent breakfast that is the perfect weekend brunch or weekday treat!

  • If you are like me, then you like have more for breakfast than just pancakes! Pancakes, though delicious, are not always as filling as I want them to be. I have listed some of my favorite, protein rich breakfast foods that are great dishes to pair with oat milk pancakes.

  • Bacon and Arugula Frittata or Caramelized Leek Frittata are two frittata recipes that are filling, egg heavy, and very delicious with pancakes.

  • Try serving you oatmilk pancakes with Miso Butter Scrambled Eggs! They are filling, creamy and a great egg pairing.

  • If you want to keep your breakfast sweet, try whipping up some coconut cream and serving with fresh berries! It is light and goes really well with the apple cinnamon syrup.

What is Apple Cinnamon Syrup Made Of?

  • Apple cinnamon syrup is made from butter, apples, cinnamon, and brown sugar. It is a simple but delicious combination that goes so well with pancakes. I like to leave my apples in larger chunks, this gives me something to really bit into while the butter and brown sugar make this delicious syrup all over my pancakes!

How To Store Leftover Oat Milk Pancakes:

  • You can store oat milk pancakes in a container in your fridge for about a week. You can also store them on your counter but if they had syrup or any toppings on top, they may become soggy.

  • To reheat, you can use a baking tray in a 300F and reheat until both sides are warm, about 5-7 minutes. You can also pop them in the toaster and toast! This is my preferred method for reheating oat milk pancakes since I like when the edges get just a little bit crispy!

Ingredients For Oat Milk Pancakes: 6 large pancakes

Recipe for Oat milk Pancakes

  • 2 Tbs melted butter+1 Tbs The butter helps add fat and creaminess to the pancakes. The extra tablespoon of butter is for cooking the pancakes.
  • 1 egg Egg is a binder for the pancakes
  • 1 tsp vanilla extract Vanilla is optional but helps add flavor!
  • 2 cups flour All purpose flour, gluten free flour, or whole wheat flour are good options
  • 1 tsp baking powder
  • 1/2 tsp baking soda The baking soda and baking powder react to help lift the pancakes and make them fluffy!
  • 1/4 tsp salt Salt helps enhance the sweet flavors!
  • 1/2 tsp cinnamon (optional) You can use other spices like nutmeg, cloves, or pumpkin pie spice too.
  • 1 1/4 cup Oat Milk Any brand will do!

Recipe for Apple Cinnamon Syrup

  • 1/2 Apple Fuji, red delicious, Gala apples are all great options. Red apples are sweeter and are sweeter than green apples are my choice!
  • 2 Tbs butter You can use coconut oil or ghee too!
  • 2 Tbs Brown sugar You can use maple syrup or honey instead of brown sugar.
  • 1 tsp cinnamon

How To Make Oatmilk Pancakes

  1. Make The Pancake Batter

    1. Melt the butter in a microwave safe bowl

    2. Combine the butter, vanilla, and egg in a bowl.

    3. Measure out the flour in a large mixing bowl and combine with the salt, cinnamon, baking powder and baking soda.

    4. add the egg mixture to the dry ingredients.

    5. Slowly add the oat milk, stirring as you add until you have smooth pancake batter.

    6. Let the pancake batter stand for 5 minutes to thicken.

    7. Heat a skillet over medium high heat with a little bit of butter.

    8. Once the butter is melted and hot, add in 1/3 cup of the batter and let cook.

    9. When little bubbles are forming on the uncooked batter side about 3 minutes, flip using a spatula and allow the other side to cook, about 2 minutes.

    10. Continue to cook until all the pancakes are made.

  2. Make the Apple Cinnamon Syrup

    1. Chop the 1/2 apple into desired size.

    2. To a skillet or sauce pan add the apple, butter, brown sugar, and cinnamon over medium heat.

    3. As soon as the brown sugar and butter are combined and bubbling, turn the heat to low and allow to simmer until ready to serve!

  3. Serve the Pancakes

    1. Serve the pancakes with apple cinnamon syrup, peanut butter, or powdered sugar!
