Easy Turkey and Egg Sandwich

I do not think anything beats a good sandwich, except a good breakfast sandwich! This egg and turkey sandwich, though prepared as a breakfast bagel sandwich, can be enjoyed any time of the day. You will love making this sandwich on a bagel (I love any bagel) but it can be prepared on any type of bread that you want!
The turkey and egg is fried in pesto and then paired with a heaping pile of pickled onions and cucumbers. It is a super filling breakfast that is high in protein, easy to prepare, and a great option for busy mornings.
I like to have a couple of bagels on hand for busy weeks so that I can enjoy a large egg and turkey sandwich any morning! You will also enjoy having this recipe on hand for those days you just need something extra delicious to start your day!
Notes and Tips For Turkey and Egg Sandwich
I use pre-sliced turkey meat for this sandwich. It makes the sandwich easy to construct but you can use leftover turkey that you may have on hand. You can also use roasted chicken, or ham for this recipe.
I love making this turkey and egg sandwich with bagels but feel free to use sourdough, seeded, or any type of bread that you want. A slightly thicker loaf does great since it helps hold up to the pesto.
I love use homemade pesto for this, but you can use your favorite store bought brand too! You can also use other sauces that have a little fat. This helps keep the sandwich moist. Try it with mayo, tapenade, or hummus!
I call for quick pickled shallots. This uses the same process as my quick pickled red onions! You can also use quick picked red onions or even just use raw onion if you do not want to wait for the quick pickling.
What to Else Goes On a Turkey and Egg Sandwich?
Breakfast sandwiches can be a little heavy at times. To keep things on the lighter side, I like to pair the egg and turkey with pickled onions and fresh cut cucumbers! They add a little brightness and acid to the sandwich, cutting through the pesto, meat, and eggs.
You can make this sandwich sun-dried tomatoes, sautéed mushrooms, or raw onions. All would taste great with the turkey and egg.

Can I Make Turkey and Egg Sandwiches For Meal Prep?
If you want to get ahead for the week (who doesn’t??) then I recommend prepping the ingredients for these turkey and egg sandwiches just a little differently. I recommend lightly scrambling the eggs instead of making fried eggs. The scrambled eggs will not get runny when you go to wrap up the made sandwiches! I also recommend applying the pesto directly to the bagels or scrambling it into the eggs.
Let the sandwiches cool before wrapping them in foil or placing in a sealed container. You can reheat in the air-fryer or in the oven on a low temperature until warmed through.
Ingredients For Turkey and Egg Sandwiches
Recipe: Serves 2
- 2 Bagels Try this sandwich with Everything Bagels, Plain Bagels, or Cheddar Bagels!
- 4 Eggs 2 eggs per sandwich is filling and delicious. Feel free to decrease or increase for personal appetite.
- 1 Quick Pickled Shallot You can also use quick picked red onions. Check out how to do a quick pickle here.
- 1 Persian Cucumber You can use regular cucmbers too. Persian cumbers have less water and will decrease the chance of sandwich getting soggy.
- 1/2 Cup Basil Pesto Homemade or storebought works great.
- 6 oz Sliced Turkey Meat Feel free to increase or decrease to desired level.
How to Make Turkey and Egg Sandwiches
Prep the Ingredients
If you have not done so, prep the quick pickled shallots. You can also skip this step by soaking the shallots in vinegar and sugar or even serving them raw.
Cut the bagels in half and set aside.
Slice the cucumber and set aside.
Over medium heat, add 1/4 cup pesto to a skillet.
When the pesto is warmed and slightly bubbly, add the sliced turkey, leaving a little bit of room in the middle by forming a circle of turkey on top of the pesto.
When the pesto is bubbly and the turkey is browned, crack 1-2 eggs on top and cover with a lid.
Let the eggs fry until just cooked, about 2-3 minutes.
2. Assemble
While the eggs are frying, toast the bagels to desired darkness
When the eggs are done cooking, slide them directly to one of the bagel halves.
Top with pickled shallots and cucumbers.
Close the bagel and enjoy! TIP: Have a napkin on hand :)
