Chorizo and Egg Tacos

Why have tacos on just Tuesday? A taco a day is definitely a better schedule for something so tasty. In this recipe I use the smoke and salty flavors of chorizo seasoning to make a pork sausage and to season scrambled eggs. Both of which get complimented by a squeeze of tart lime juice and slice of creamy avocado. Incredibly easy to make, these tacos can be made throughout the week as a great meal and can even be made the day before.
Boring breakfasts can create a boring day, but a spicy and fun first meal can set you up for successful day, especially if that meal involves tacos. I use corn tortillas because I love the flavor, they are gluten free, and are the perfect size for tacos. Flour tortillas are also great. I recommend using the one and making a delicious burrito. This delightful recipe will quickly become a weekly favorite!
Notes and Tips for Better Tacos:
If I do not have time to make corn tortillas, I like to find store-bought ones that do not have added sugar or preservatives.
This recipe can easily be split up into different serving amounts. The seasoning will always keep, and the pork can be cooked and enjoyed all week with fresh scrambled eggs. I recommend using 5 fresh scrambled eggs for 3 servings with about 1/3 to 1/2 lb of ground meat.
What Other Meat Can I Use For These Tacos?
If you want to sub ground chicken or even tofu instead of pork, these tacos will still be delicious. I recommend cooking 1 lb of ground protein since its a good serving size that keeps well as leftovers for your whole week.
You can also buy pre-seasoned and packaged chorizo. Pre-seasoned chorizo may be spicier than what you prefer so look for the spice level that fits for you!
How To Store Breakfast Tacos?
Eating on the go? These are just as easy to make into bowls and enjoy with the tortilla on the side. This is usually a good option if I am late and need to eat breakfast when I get to work.
If you want to store your tacos wrapped in foil, this is also a convenient way to store your tacos. They can be warmed in the oven while wrapped in the foil and then enjoyed on the go.
What Else Can I Add to Breakfast Tacos?
If your tacos need some extra toppings, try tomatoes, some sliced onion, shredded spinach, or cheddar cheese. If you have any topping recommendations, leave them in the comments below!
Sauce additions for these tacos include salsa, guacamole, or sour cream. These are great to dip your tacos into or to spoon onto each bit as you eat.

Recipe: makes 4 tacos
- 1 lb ground pork unseasoned, see above for other options
- 5 -6 eggs You can also use 3 eggs and then sub the rest with egg whites for a leaner taco
- 1 Tbs butter or olive oil
- 2 Tbs garlic powder
- 2 Tbs smoked paprika
- 1 Tbs cumin
- 2 tsp oregano
- 2 tsp salt to taste
- 1 tsp chili powder
- Corn tortillas flour tortillas work great too and even roll slightly better
- Cilantro for serving
- Lime for serving
How to Make Egg and Chorizo Tacos:
In a jar or bowl, combine spices and shake well.
Divide the seasoning in two. The seasoning will be added to both the pork and the eggs.
Prepare your toppings by washing and chopping cilantro and slicing your avocado and lime. I cut the avocado into cubes so that they are easily added to tacos. I also slice the limes into wedges for easy squeezing.
In a skillet begin cooking your ground pork. If cooking 1lb add 1.5 Tbs of seasoning and 1 Tbs of oil. Mix well and allow the pork to finish cooking. Set aside pork on a plate. If your pork is really greasy, I recommend setting it aside on a paper towel to drain away excess fat.
Crack 5 eggs in a bowl and whisk.
In the same skillet used for cooking the pork, pour your eggs on medium heat. Add an additional glug of oil to prevent sticking if the skillet is dry.
When the eggs are about halfway cooked, add 1/2 Tbs of seasoning and mix well. Continue to stir until the eggs are cooked to desired doneness.
Add desired amount of seasoned pork sausage and mix with the eggs. Taste and adjust chorizo seasoning and salt.
In the oven or on a separate skillet, heat your tortillas until warm.
Assemble tacos with a scoop of chorizo egg and sausage mixture, top with cilantro, avocado, lime, and sprinkle of salt.
