I top these crackers with Everything But the Bagel Seasoning for added flavor but that is an optional step. The seeds in these crackers make up most of the crackers with the buckwheat flour helping hold them together.

What Does Buckwheat Taste Like?

  • Buckwheat has an earthy, nutty flavor that is really delicious. Lighter buckwheat flours will be mild in flavor compared to a dark buckwheat flour. The difference in color and flour is due to the grinding of the buckwheat unhulled for darker buckwheat flour and the lighter flour comes from grinding the buckwheat after it has been hulled. Both are still gluten free and very tasty.

What Else Can I add To Buckwheat Crackers?

  • These buckwheat crackers are really versatile for catering to your taste and what you like to add! You can add extra nuts like crushed hazelnuts or even almond slivers. You can add dried fruit if you want to combine savory and sweet. Though if you add dried fruit, you may want to consider leaving off the everything seasoning. You can also add more spices like garlic powder, fennel seeds, or dried basil.

Is There Gluten In Buckwheat Flour?

  • Buckwheat flour, despite its name, is gluten free. It is a great option for gluten free eating and has great flavor and nutrients. If you are not gluten sensitive, I still encourage you to try buckwheat flour! It is a filling option and is super flavorful.

Ingredients For Buckwheat Crackers with Everything Seasoning:

Recipe: Creates about 4 servings

  • 1/3 cup Buckwheat Flour You can use dark or light buckwheat flour. Buckwheat groats will not hold up as well, I recommend using flour or grinding groats in a blender or food processor.
  • 1/4 cup pumpkin seeds unroasted and unsalted is preferred since the crackers bake and we add salt to the mixture.
  • 2 Tbs sunflower Seeds Similar to the pumpkin seeds, I recommend using unroasted and unsalted since the crackers bake.
  • **1/4 cup Flaxseed ** Look for the unground flax seeds. If you can only find ground, use 2 Tbs.
  • 1 Tbs Sesame Seeds You can use white or black
  • **1 Tbs Chia Seeds ** Chia seeds add fiber and help hold the crackers together
  • 1 Tbs Hemp Hearts These add fiber and omega 3's!
  • 1/2 tsp salt Salt helps balance these flavors, you can leave the salt out if you wish.
  • 2/3 cup water + more as needed Using warm or hot water is best. Add the water a little bit at a time until you have a spreadable paste. Amount of water needed will vary based on type of flour and seeds used.
  • 1 Tbs Everything Seasoning Pre-mixed seasoning is available at most grocery stores or online.

How To Make Buckwheat Crackers:

  1. Combine the Ingredients

    1. Preheat the oven to 325F (convection if possible)

    2. In a bowl add all the dry ingredients, except for the Everything Seasoning

    3. Slowly add the water until the mixture is thick but spreadable. If you add too much water, you can re thicken the “dough” with a couple extra tablespoons of flour.

  2. Add Everything Seasoning and Bake

    1. To a parchment paper lined baking sheet, spread the cracker “dough” out. Use a spatula to even out the edges and make sure the center is not thick.

    2. Sprinkle with everything seasoning.

    3. Bake until golden and crispy, about 40 minutes. Look for the edges to be browning, the seeds to be fragrant, and for the crackers to easily pull away from the parchment paper. You can bake this for up to an hour but pay attention for burning seeds.

    4. Remove to a cooling wrack to cool fully and then enjoy!

How To Store Buckwheat Crackers:

  • Once completely cooled, these crackers can be stored in a container or Ziploc bag on your counter or in your pantry! Be sure to put them away once they have cooled or the moisture will make them soggy in whichever container you use. I recommend consuming within 1 week of making them to ensure they taste crisp but not stale!
