Avocado Toast With Feta

By: Merritt Allen

If there is one breakfast I love it is avocado toast. Toasted sourdough bread topped with creamy avocado is a comforting and delicious start to the day. One of my favorite variations of avocado toast is avocado toast with feta. Feta avocado toast is elevated but easy and is a super filling breakfast. Made with whipped feta to make it spreadable, avocado toast with feta will be a sure favorite with you and your family.

Avocado has a creamy texture and the contrast with salty feta is truly delightful. For this feta toast, the feta is whipped with honey, fresh garlic, salt, and pepper. This creates a simple feta spread that is creamy but has so much flavor.

This post will walk you through making this simple avocado feta toast and provide easy substitutions and additions for an even heartier breakfast!

Notes and Tips For Avocado Feta Toast:

  • Using bread the is thick enough to hold both the avocado and feta is important! Try to find a thick sliced sourdough, rustic loaf, or even your favorite bagel. Any bread will do, but you may like the thicker slices for their heartiness.

  • Mashing the avocado separately will make it super easy to spread onto your toasted bread. I like to mash mine in a small bowl and then spread it the same as I do the feta topping.

  • If you can not find avocados, they are not in season, or you prefer not to eat them, try using hummus instead!

What To Pair With Avocado Feta Toast?

  • There are lots of pairings for avocado feta toast that make it a super hearty and more filling breakfast. I have listed my favorites below!

  • Salmon Scrambled Eggs are savory, delicious, and are also served with feta. These scrambled eggs would go great on the side or on this toast!

  • A sweet addition to this toasty breakfast is my Browned Butter Cardamom Muffins or my Matcha Banana Bread! These are easy to make the day ahead and are a great pairing for the super savory feta avocado toast!

Are there any Substitutions for Feta?

  • Some people do not love feta as much as others, but luckily there are many substitutes that are equally delicious! Try using goat cheese crumbles, parmesan, or pecorino romano! Any cheese will do and its mostly based on personal preference. You can also leave feta out all together for a dairy free option. If you want to leave the cheese out, adding caramelized onions with mushrooms is a great replacement. These are creamy and though different in texture, equally delicious.

What To Add To Feta Toast?

  • There is a lot to add to feta avocado toast. For a salty and hearty addition, try adding bacon! You can also add sausage, chicken sausage, or even prosciutto. Adding a salty meat is a great contrast to avocado and feta.

  • You can also add raw onion, which may not help your breath, but will taste so good! For an easy flavor addition, a drizzle of chili oil is an easy way to add spice and to lightly change the flavor of your feta avocado toast.

  • Adding eggs is also a great way to add protein to your feta toast. A runny yolk coats everything so nicely that you will be making it on repeat! If you add anything to your toast and love, let me know in the comments below!

How to Make Feta Avocado Toast

  1. Make The Whipped Feta

  2. Using an immersion blender or regular blender, add the feta, olive oil, garlic clove, and lime juice. Lightly blend until the feta, oil, and garlic are well combined.

  3. Add the honey, salt, and pepper to taste. Blend again until spreadable. Tip: if the spread is super thick, add a couple tablespoons of water to help emulsify and blend!

2. Make the Feta Toast with Avocado

  1. Toast the sourdough bread. Toast as many pieces of bread as there are people eating. Toasted bread does not keep super well.

  2. Either in the skin or in a small bowl, mash the avocado until it is lightly chunky.

  3. Spread the avocado on the toasted bread.

  4. Chop the tomatoes and add a couple of slices per toast.

  5. Dollop the whipped feta spread on top of the tomatoes. Add Salt, Pepper, and a drizzle of honey to taste.

  6. Enjoy!
