The marshmallows add an extra bit of chew to a classic chocolate chip cookie recipe. Kept frozen until added, the marshmallows will remind you of a summertime smore in the warmer months or a cup of your favorite cocoa during winter time. - 1/2 cup butter Unsalted butter is preferred. Make sure to use softened butter so that it creams easily with your sugars. If your sugar gets too soft, just chill the dough an extra 10 minutes.
- 1 egg + 1 egg yolk The eggs are binders, while the yolk adds extra fat.
- 1/3 cup + 2 Tbs dark brown sugar You can use light brown sugar too! The brown sugar is what helps makes these cookies so chewy.
- 2 Tbs white sugar The white sugar helps stabalize the cookies.
- 1 tsp vanilla Vanilla adds a lot of flavor to your cookies. You can also try using almond extract!
- 1 1/2 cup + 1 Tbs flour You can use any type of flour you wish, even gluten free flour. I recommend weighing your flour using a scale. The flour should measure 190g.
- 1/2 tsp salt Salt helps balance all the sweet flavors.
- 1/4 tsp baking soda
- 1/2 tsp baking powder Baking powder and baking soda add lift to your cookies.
- 1/2 cup mini chocolate chips You can use any type of chocolate chips or even chocolate chunks!
- 1/2 cup marshmallows Frozen.
How To Make Marshmallow Chocolate Chip Cookies
Make the Cookie Dough
If you have not already, place your marshmallows in the freezer!
Using an electric mixer or stand mixer, cream together the butter, brown sugar, and white sugar.
Add the egg, egg yolk, and vanilla. Mix until combined, about 1 minute.
In a separate bowl, measure the flour, salt, baking powder, and baking soda. Mix lightly with a fork.
Slowly add the flour mixture to the wet ingredients and combine with a spatula or wooden spoon.
Once the dough is formed, add the chocolate chips and mix into the dough.
Cover and chill in the fridge or freezer for minimum 30 minutes.
Bake the Cookie Dough
Preheat the oven to 350F
Line a cookie sheet with parchment paper
Scoop out 1 inch dough balls using your hands or a spoon. Split the dough and add 2-4 marshmallows into the center of the cookie dough ball.
Press the cookie dough around the marshmallows until they are mostly covered.
Continue to form dough balls with the marshmallows in the center until you have 10-12 cookies.
Place your cookies in oven and bake for 6 minutes or until starting to flatten.
Remove and add 2-3 marshmallows to the tops, lightly pressing them in.
Return to the oven and continue to bake until the cookies are browning around the edges and the marshmallows are puffy and soft, about 3-4 additional minutes.
Remove to cool!
